Chicken Nachos #recipe What you’ll need: * Slow cooker * 6 chicken breasts * 1 1/2 cups diced tomato * Juice of one small lime * 2 tablespoons chopped cilantro * 1 packet of taco seasoning * Olive oil For serving - get one to two bags of your favorite cheese (we like the Mexican blend for this recipe) 1-2 bags of your favorite tortilla chips (we like Santitas brand, yellow corn) and sour cream, salsa, guacamole, or any other toppings of your choice. Note* to make it a bit easier and cut prep time, you can substitute the tomato, cilantro, and lime with one to two cans of Rotel diced tomatoes with lime and cilantro. You may also want rubber gloves for handling the chicken. Instructions: 1. Chop your tomato and cilantro, place in a bowl and squeeze in the juice of one lime. (I also like to use rubber gloves for this step) 2. Place chicken in slow cooker and coat with olive oil. 3. Rub taco seasoning onto chicken. (More than one pack may be necessary depending on your flavor preference) I like to make sure they are completely covered in flavor. 4. Dump tomato mix into slow cooker, making sure to move it around the chicken a bit. 5. Cook on low for 6 hours or high for 3 hours. If you’re a little short on time, you can cook for one hour on high and turn to low for 3-4 hours. You’ll know it’s ready when it pulls apart easily. 6. When chicken is fully cooked, remove from slow cooker and use a fork to shred, return to slow cooker and give it a good stir. 7. Serve over chips, and top with cheese and whatever else your heart desires.
